Preparation Steps
Preheat the oven to 325°F (163°C). Grease and line an 8x8 inch baking pan with parchment paper.
Combine graham cracker crumbs, 0.25 cup sugar, and melted butter in a bowl. Press mixture firmly into the bottom of the prepared pan.
Bake the crust for 10 minutes, then remove from oven and set aside.
In a large bowl, beat softened cream cheese until smooth. Add 1 cup sugar and continue to beat until creamy.
Add eggs, one at a time, beating well after each addition. Mix in vanilla extract and sour cream until fully combined.
Pour cheesecake batter over the baked crust and spread evenly.
Bake for 35 minutes or until edges are set and center is slightly jiggly. Allow to cool completely.
Refrigerate for at least 4 hours before slicing into bars and serving.
Notes
For added flavor, top with fresh berries or a drizzle of chocolate sauce before serving.
