Instructions
Preparation Steps
Place chicken breasts in the bottom of the crockpot.
In a small bowl, mix chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
Rub the spice mixture evenly over the chicken breasts.
Add sliced bell peppers and onions on top of the chicken.
Drizzle olive oil over the vegetables.
Cover and cook on low for 4 hours until the chicken is tender.
Remove chicken and shred with two forks.
Return shredded chicken to the crockpot and stir to combine with vegetables.
Serve the fajita mixture warm in flour tortillas.
Notes
Serve with fresh guacamole, sour cream, and salsa for a complete meal.
