For the Topping:
1/2cupbrown sugarpacked
1cuphot water
1teaspoonground cinnamon
Instructions
Prepare the Crock Pot: Lightly grease the inside of your crock pot or line it with parchment paper for easy cleanup.
Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine Wet Ingredients: In a separate bowl, mix the granulated sugar, milk, melted butter, and vanilla extract until smooth.
Make the Batter: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the diced apples.
Pour into Crock Pot: Spread the batter evenly in the bottom of the crock pot.
Prepare the Topping: In a small bowl, mix the brown sugar and cinnamon. Sprinkle this mixture evenly over the batter. Pour the hot water gently over the top without stirring.
Cook the Cake: Cover the crock pot and cook on high for 2-3 hours or on low for 4-5 hours, or until the cake is set on top and the apples are tender. The bottom will have a pudding-like consistency.
Serve: Scoop the warm cake into bowls, ensuring you get some of the pudding-like sauce from the bottom. Serve with vanilla ice cream or whipped cream if desired.
