Instructions
Preparation Steps
Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan.
In a large bowl, beat cream cheese and 1 cup of sugar until smooth. Add vanilla extract and mix well.
Add eggs one at a time, beating well after each addition. Pour in heavy cream and mix until just combined.
Pour the cheesecake batter over the crust. Bake for 60 minutes or until the center is set but still jiggles slightly.
Allow the cheesecake to cool, then refrigerate for at least 4 hours or overnight.
Sprinkle the remaining sugar evenly over the top of the cheesecake. Use a culinary torch to caramelize the sugar until golden brown.
Notes
For a perfect caramelized topping, use superfine sugar and ensure the cheesecake is thoroughly chilled before torching the topping.
