Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Sauté onions until translucent.
Add minced garlic and cook for another minute until fragrant.
Stir in tomatoes, basil, salt, and pepper. Cook for about 10 minutes, stirring occasionally.
Blend the mixture until smooth using an immersion blender or in batches with a regular blender.
Return the soup to the pot and stir in the heavy cream. Heat until warmed through.
Notes
Add fresh basil leaves before serving for an extra touch of flavor. Pair with crusty bread!
