Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another 1 minute until fragrant.
Stir in diced bell peppers and cook until slightly softened, about 7 minutes.
Add diced tomatoes, chicken broth, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use an immersion blender to puree the soup until smooth. Stir in heavy cream and heat through without boiling.
Serve hot with a garnish of fresh herbs or crumbled cheese if desired.
