Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, cream the softened butter with granulated sugar until light and fluffy.
Add egg whites one at a time, beating well after each addition, then stir in vanilla extract.
Gradually add all-purpose flour and mix until smooth dough forms.
Roll the dough out thinly and cut into small rectangles. Place them on prepared baking sheet.
Bake for 12-15 minutes until edges are golden brown. Remove and let cool.
Whip heavy cream with powdered sugar until stiff peaks form for the filling.
Sandwich two wafers with whipped cream and chill before serving.
Notes
For extra flavor, add a pinch of cinnamon to the dough or garnish with fresh berries before serving.
