Preparation Steps
In a medium bowl, beat softened cream cheese until smooth.
Gradually add powdered sugar and vanilla extract, mixing until fully incorporated and smooth.
Roll the mixture into small 1-inch balls and chill in the refrigerator for 1 hour.
Roll the chilled balls in butterscotch chips to coat completely.
Place mints on wax paper and refrigerate until firm, about 30 minutes.
