Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add diced carrots and celery, sauté until softened, about 5 minutes.
Pour in chicken broth, bring to a boil, then reduce to simmer.
Add egg noodles and thyme, cook until noodles are tender, approximately 7-8 minutes.
Stir in shredded chicken and black pepper. Heat through for 3 minutes before serving warm.
Notes
For a vegetarian version, omit the chicken and use vegetable broth instead of chicken broth.
