Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add diced onions to the skillet and cook until softened, about 5 minutes.
Stir in kidney beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Cook for another 3 minutes.
Transfer mixture to a casserole dish and top evenly with shredded cheddar cheese.
Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
Let casserole cool for 5 minutes before serving.
Notes
This casserole can be customized by adding jalapeños or swapping beef for ground turkey.
