Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until combined.
Slowly add the wet ingredients to the dry ingredients and mix until just combined.
Fold in 1 cup of crushed Oreo cookies gently into the batter.
Divide the batter evenly between the two prepared pans and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
For the frosting, beat the cream cheese and butter together until smooth and fluffy.
Gradually add the powdered sugar, beating well after each addition.
Add the heavy cream and beat until light and fluffy.
Fold in the remaining 0.5 cup crushed Oreo cookies to the frosting.
Assemble the cake by spreading frosting between the layers and all over the top and sides.
Refrigerate for at least 1 hour before serving to set the frosting.
Notes
This cake is best served chilled and can be stored covered in the refrigerator for up to 3 days.
