Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking powder, and baking soda.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg, vanilla extract, and dissolved coffee granules until combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Prepare the streusel topping by mixing flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter until the mixture is crumbly.
Drop spoonfuls of cookie dough onto prepared baking sheets then sprinkle streusel topping over each cookie.
Bake for 12-15 minutes or until edges are golden brown.
Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
