Instructions
Preparation Steps
Place the dark chocolate chips in a heatproof bowl.
Heat the coconut milk in a small saucepan over medium heat just until it starts to simmer, then pour it over the chocolate.
Let sit for 2 minutes, then stir gently until smooth and glossy.
Mix in vanilla extract and sea salt.
Chill the mixture in the refrigerator for at least 2 hours until firm enough to scoop.
Using a small spoon or melon baller, scoop out the mixture and roll into balls, then roll each truffle in shredded coconut.
Refrigerate truffles until ready to serve.

Store truffles in an airtight container in the refrigerator for up to one week or freeze for longer storage.
