Instructions
Preparation Steps
Preheat oven to 400°F (205°C).
In a saucepan, bring water and butter to a boil.
Add flour all at once and stir vigorously until mixture forms a ball.
Transfer dough to a mixing bowl and beat in eggs one at a time.
Pipe dough onto baking sheet into 4-inch long éclairs.
Bake for 20-25 minutes until golden and puffed; cool completely.
Prepare vanilla custard and let it chill.
Fill cooled éclairs with custard using a piping bag.
Heat heavy cream until simmering, then pour over chopped chocolate; stir until smooth to make ganache.
Dip the tops of filled éclairs into ganache and let set before serving.

Store leftovers refrigerated and consume within 2 days for best freshness.
