Preparation Steps
Preheat oven to 325°F (163°C). Line a 9x9 inch baking pan with parchment paper.
In a medium bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the prepared pan to form the crust.
In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add eggs one at a time, beating well after each addition.
Stir in the melted chocolate, sour cream, and vanilla extract until fully combined.
Pour the cheesecake batter over the crust in the pan and spread evenly.
Bake for 40 minutes or until the center is set but still slightly jiggly.
Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
