Instructions
Preparation Steps
Cook brown rice according to package directions, substituting chicken broth for water.
Heat a large skillet over medium-high heat and add chicken thighs, cooking until browned and cooked through.
Remove chicken from skillet, shred it with two forks, and return it to the pan.
Stir in chipotle sauce, black beans, corn, and diced tomatoes. Cook until heated through.
Serve the chicken mixture over the cooked rice and top with cheese, sour cream, and cilantro.
Notes
Add avocado slices for a creamier texture. You can also mix in some lime juice for extra flavor.
