Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Season chicken thighs with salt and pepper, then brown them on both sides, about 4 minutes per side. Remove from skillet.
Add onions, garlic, and bell peppers to the skillet and sauté until softened, about 5 minutes.
Pour in the white wine and cook for 2 minutes to reduce slightly.
Add chopped tomatoes, oregano, and red pepper flakes. Stir well.
Return chicken to the skillet, cover, and simmer on low heat for 30 minutes until the chicken is cooked through.
Adjust seasoning with salt and pepper as needed and serve hot.
