Preparation Steps
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, beat the egg yolks and sugar until pale and thick, then add vanilla extract.
In a separate bowl, beat egg whites with salt until stiff peaks form, then fold into the yolk mixture.
Gently fold in the flour, then spread evenly on the prepared baking sheet. Bake for 12-15 minutes.
Whip the heavy cream until stiff peaks form. Spread over the cooled cake, add berries, and roll.
Notes
This cake roll is best served chilled to keep the cream firm.
