Instructions
Preparation Steps
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round baking pan.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a separate large bowl, cream the softened butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Alternately add the dry ingredients and sour cream to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
Gently fold in the fresh mixed berries.
Pour batter into prepared pan and smooth the top. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
Let cake cool in pan for 10 minutes; then transfer to a wire rack to cool completely before serving.
Notes
For best results, use fresh, ripe berries and serve the coffee cake with a dusting of powdered sugar or a drizzle of glaze.
