Instructions
Preparation Steps
In a medium bowl, toss the diced apples with sugar, cinnamon, nutmeg, and lemon juice. Set aside to marinate.
In a large bowl, combine flour and cold butter. Use a pastry cutter or fingers to blend until mixture resembles coarse crumbs.
Slowly add cold water, mixing until dough just comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
Preheat oven to 375°F (190°C). Roll out dough on a floured surface and cut into 4-inch circles.
Place a spoonful of apple filling in the center of each dough circle. Fold dough over to create a half-moon and seal edges with a fork.
Brush each hand pie with beaten egg and sprinkle with coarse sugar.
Bake for 20-25 minutes or until golden brown and filling is bubbly. Cool slightly before serving.
Notes
These hand pies can be made ahead and frozen before baking. Simply bake directly from frozen, adding a few extra minutes to the cooking time.
