Instructions
Prepare the Crust:
Preheat Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
Mix Crust Ingredients: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Press into Pan: Press the crust mixture into the bottom of the prepared springform pan. Bake for about 10 minutes, then remove from the oven and let it cool.
Prepare the Cheesecake Filling:
Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mixing until well combined.
Add Eggs: Add the eggs one at a time, mixing on low speed until just combined. Do not overmix.
Incorporate Sour Cream and Cinnamon: Stir in the sour cream and cinnamon (if using) until smooth.
Prepare the Apple Topping:
Mix Apples: In a bowl, combine the sliced apples, brown sugar, cinnamon, and lemon juice. Toss until the apples are coated.
Assemble the Cheesecake:
Layer the Filling: Pour half of the cheesecake filling into the cooled crust. Evenly distribute half of the apple mixture on top. Pour the remaining cheesecake filling over the apples, then add the rest of the apple mixture on top.
Prepare the Crumble Topping:
Mix Crumble Ingredients: In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and melted butter. Stir until crumbly.
Add Crumble Topping: Sprinkle the crumble mixture evenly over the top of the cheesecake.
Bake:
Bake: Bake in the preheated oven for about 50-60 minutes, or until the center is set and the edges are lightly golden. The center may still be slightly jiggly; it will firm up as it cools.
Cool: Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.
Serve:
Slice and Enjoy: Carefully remove the sides of the springform pan. Slice and serve your delicious Apple Crumble Cheesecake chilled, and enjoy the delightful flavors of apple and cream cheese in each bite!
